 The Science of Milk skin

Milk skin, the thin layer of proteins that forms when your milk is hot. For many people this might be an annoyance, especially when cooking using milk. 
First, let's figure out what milk is to understand this phenomenon. The dairy milk is produced by lactating animals. Lactation is the process where mammals produce milk in order to sustain their offspring. No, this doesn't necessarily mean that you are taking a baby's life force just so you can dip your cookies. Usually farmers inject hormones (that are perfectly humane) to make cows and other mammals produce extra milk. Milk is made of many proteins and h2o.  So when milk is boiled for the process of pasteurization* the h2o evaporates causing the proteins to condense creating milkskin



*Pasteurization, heat-treatment process that destroys pathogenic microorganisms in certain foods and beverages.
